They are pretty yummy. They even reheated in the microwave really well. I don’t have jumbo silicon muffin cups so I used the regular size muffin tin. I cooked them 20 minutes. I look forward to trying the different flavors.5 stars

Caraway makes a ceramic coated muffin pan, it looks and reads like it may be a healthy alternative. Lisa, will you let us know your thoughts on this muffin pan. I am looking to purchase one, if you feel they are good.

Instead of grape tomatoes I used sundried. So delicious!! And perfect for a make ahead breakfast! Thank you, Lisa!5 stars

I made the kale sausage muffins and was taking them to a party, so I actually had to make them in a mini muffin tin which made 24 of them with 2 regular size left over.
I baked the minis for 15 minutes only because they are smaller and juat looked done at that time, but the big ones weren’t done. 20 minutes total for those and all were perfect.
I also only needed 10 eggs with a little water added due to the small size.
Thanks Lisa! You are my go-to for healthy, yummy recipes!5 stars

It may be the liquid from the tomatoes and spinach. But as long as the internal temperature is where it should be, the muffins should be okay.
