Hi Gavin – thanks for sharing your story and I’m sorry to hear of your illness. I’m glad you’re enjoying my recipes, and yes, you could certainly add a few hard boiled eggs into the meatloaf as well. I’ve seen that done many times, though I’ve never tried it myself. I’ll have to give it a go!

Hi there Lisa i have just stumbled across your beautiful looking chicken soup which i will be making tomorrow. I was a chef many, many years ago and my story is sort of a reverse of yours where after 15 years in hospitality where i eventually made the move into the corporate world before i turned 40. Soon after my general people and client engagement skills became highly apparent and i was fast tracked to becoming one of the partners in the firm. I had swapped one stressful environment to another, however, in the corporate world I too was hit with long hours, a large amount of stress and unfortunately I became very ill, which had nothing to do with my work lifestyle, it is an illness which is not well known and there is almost no funding or care to look for a cure. Back to this beautiful looking meatloaf, what’s your thoughts of adding 2-3 hard boiled eggs, as you form your loaf. Its always worked really well and the family always love this addition.
